I am a Chicago native, south side. I grew up in the neighborhood of Archer & Pulaski, on delivered pizza at least 3 nights a week. Neighborhood pizza on the south side is not Giardano’s deep dish. It’s the opposite. It’s cracker thin crust, simple pizza sauce, perfect ratio of cheeses. That’s the kind of pizza I make. I also make a pesto pizza (with sun dried tomatoes, goat cheese, fresh basil) that does not really represent Chicago, but hey, I have lived in Caly since 1990 and am officially a resident of, so gotta have both!
